Lazy Saturday Bliss: Crock Pot Chicken Nachos and Seahawks Victory

Sometimes the best weekends are the ones spent slow and easy, with simple comforts and good company. This past Saturday was exactly that—a day to relax, enjoy some homemade food, and cheer on the Seahawks. The day started late and lazy, but it turned into a cozy, satisfying experience that felt like a breath of fresh air after a hectic week.

A Slow Start with Simple Breakfast
The morning began with a slow wake-up, no rush or plans pressing us forward. For breakfast, I kept it light but filling: half a slice of 70-calorie toast spread with Dijon mustard, topped with one egg and a slice of turkey. It was a small but satisfying meal that gave me enough energy without feeling heavy.
This kind of breakfast is easy to prepare and perfect for a lazy morning. The Dijon mustard adds a nice tang that pairs well with the turkey and egg, making it more interesting than plain toast. It’s a great example of how small tweaks can make simple meals enjoyable.
Preparing for Dinner: Crock Pot Chicken Nachos
To keep the day easy, I put some chicken in the crock pot early on. Slow cooking the chicken meant it would be tender and flavorful by dinner time, perfect for nachos. When evening came, my mom and I made homemade tortilla chips to go with the chicken. We added three tablespoons of refried beans and a 40-calorie cheese sauce to keep the dish lighter but still tasty.
Making nachos from scratch like this is a fun way to enjoy a classic comfort food without the usual heaviness. The homemade chips are crisp and fresh, and the slow-cooked chicken adds a rich, juicy texture. Seahawks Game and Cozy Evening
While enjoying our nachos, we watched the Seahawks game. I had a $100 bet on the team, so the win felt extra sweet—thank you, Jesus! The game added excitement to the evening and made the food taste even better. After the game, we relaxed with a few shows on Netflix and Hulu, winding down the day with laughter and good stories.
Reflecting on the Weekend
This Saturday was a welcome change from the previous day, which had been stressful and busy. Spending time with my mom, sharing food, and watching the game made the day feel special. We also went through some clothes and found many pieces from Mercedes that I haven’t gotten rid of yet. It was a reminder of memories and the importance of holding onto things that bring comfort. I also took my shot on Saturday too.
