  • Lunch: Two corn tortillas with two chicken strips

  • Dinner: A bean and beef burrito from Taco Bell, but without the tortilla—everything was scraped into a bowl


The dinner choice was practical. Originally, a protein or power bowl was considered, but the calorie count was nearly 650, which felt too high for the day. Adjusting meals like this shows how small changes can make a big difference in managing calorie intake without sacrificing flavor.



Unexpected Connections at Walmart


This morning, a chance encounter at Walmart brought a touching moment. Cindy Theel Allen, someone known for a lifetime, was there with her granddaughter. Greeting Cindy with a hug sparked a warm exchange. Her granddaughter was curious about who I was, and Cindy introduced me as “Mercedes’ mom.”


The granddaughter shared that she had drawn a picture for Mercedes and sent it via phone. I invited her to send it to me on Facebook, keeping the connection alive through simple acts of kindness.


Cindy also shared a deeply personal story. Her brother recently passed away from severe burns. During the family’s time in the hospital, they found comfort in watching and listening to the Quinault Valley Chapel live stream. Cindy expressed gratitude for the prayers, a reminder that even when we don’t realize it, our actions and presence can support others in profound ways.
