What I Ate Today


The day began with a straightforward but nourishing breakfast. A slice of 70-calorie toast spread with peanut butter, one egg, and an apple provided a solid mix of protein, healthy fats, and fiber. This combination fuels the body steadily and helps maintain energy levels through the morning.


For lunch, I chose five homemade chicken nuggets alongside fresh cucumber slices. This meal was satisfying without feeling heavy, offering protein and hydration from the cucumber. It kept me energized for the afternoon without the sluggishness that heavier meals sometimes cause.


Dinner was lighter, featuring two small slices of cucumber and another slice of 70-calorie toast with peanut butter. This meal helped me wind down while still providing nutrients and staying within calorie goals. Keeping dinner simple and light supports better sleep and digestion.

Looking ahead, I will travel to Queets on January 20th to assist people with filling out government forms, including Social Security applications. Helping others navigate these processes is meaningful work that makes a real difference in their lives. It also strengthens community connections and builds practical experience.
